I don’t know where people find these jobs… my bosses were never like “you have one month to write this hello world” or “congratulations you have finished sooner, let’s do something fun”, but always like “oh! You’ve finished this task? Then you have time to do more”.
It’s more like you suddenly have to wait for external dependencies like other contractors, missing budgets or your high priority task is for the other department just low priority. So you have to wait. Then add some sickness, vacations and expired credentials and contracts to the mix. Things can take a while then.
